I noticed that Head & Shoulders shampoo contains zinc. Suppose it's ok to mix a little with the new blend of oil to provide the zinc necessary to protect my old engine?

With regards to your old engine, I think your wife said it needed an overhaul.

And even then I would suggest Castrol High Mileage oil to reduce the friction otherwise you may have to have a major engine failure will all the wear and tear and then the fact it has been sitting in storage for over 10 years.
