I've got the ole smoker going with a slab of ribs and a slab of baby backs. I've got family coming over to watch the Daytona 500 and have a contest on which is better----Baby Backs or Slab Ribs. Results to follow later this evening. I think Mark Martin will win the Daytona 500 and the slab ribs will beat out the baby backs.

Sorry for the delay with results. I was in meetings all of yesterday. The baby backs won by a landslide. That was the first time I've done the slab ribs on the smoker. I normally do slab ribs on the grill with direct heat. I prepared both ribs the same and smoked them together. The slab ribs were very good but not near as tender as the baby backs. I have another pack of slab ribs and will do a few things different on the next try. Sunday was cold and a little windy and I had a hard time holding my 225 degree temperture. That could have caused some of the problems.

I doubt it was the wind messing your temp that was the problem because it would have messed up the baby backs also. Face it....Baby Backs are just better by far!! I par boil mine for about an hour first and the meat just falls off the bone! Yum, can't wait to grill some soon!
