Caribbean Grilled Jerk Chicken

2 lbs. boneless chicken breasts sliced in half ...length wise
1/3 c. soy sauce
2 T. sesame oil
3 cloves garlic minced
3 green onions chopped
3 T. fresh thyme leaves (pain)
1 1/2 t. ground allspice
1 1/2 t. fresh ground pepper
1/2 t. ground cinnamon
1/2 t. ground red pepper

Put all except chicken in blender and process until smooth. Pour into large baggie add chicken and marinate 3 to 24 hrs.. Grill serve with salsa.


Mango Papaya Salsa

1 mango, peeled seeded and diced
1 papaya, peeled seeded diced
2 green onions, minced
1/4 c. minced cilantro
2 t. brown suger
1 T. lemon juice
1-2 t. hot sauce

Combine all- cover , chill at least 1 hour. makes 1 1/2 c.

That sounds very tasty and will go in the recipe box. Our problem will be finding the mango/papaya that is not already rotted or else so gassed up that it never ripens but turns black and dies. Have the same challenge with avocado, even in season.
