In a few weeks I will be trying this on the grill for the first time. Should work fine.

A long time ago, for some company we had visiting the house we created something that we now repeat often: Breakfast Quesadilla

Pre-cook/saute mushrooms, onions, peppers (whatever you like), can be done day before and refrigerated.

Cook up bacon and/or your favorite sausage. Cut or crumble to small pieces.
Scramble up lots of eggs (3 eggs per person works for us).
Shred favorite cheeses or use blended Mexican store bought cheese (works well because it is thin consistency and easy to spread).

On a griddle or griddle tray on the grill, lay one flour tortilla and generously spread cheese on it.

Layer on scrambled eggs, then vegatables and finally some of the bacon/sausage.
Add another layer of cheese (acts as glue), then top with 2nd tortilla and press down.

With an electric griddle we have I heat at 275 to let it go slow enough to get the cheese to melt.
Flip after a few minutes and remove after 2nd side has firmed up.

Remove to cutting board, slice into 4 pieces - build a tray of quesadillas , some with meats, some without, some with vegetables, some without to accommodate all tastes likes and dislikes.

Serve with favorite hashbrown/potatoe dish.

Easy finger food with all ingredients nicely tucked inside and held together with the cheese.

Some guests have asked for salsa to be on the table too.

Enjoy!

This one goes in the LakeBox under the "RainyDay LaidBack Brunch" category with a prompt to remember the Mimosa's and Bellini's by the pitcher in frosted stemware.
Good Un'

So are you saying.....that if I see the flag flying on a "rainy/laid back day" that I should venture out across the lake?

You better bet on it. Might not be a quesadilla, but it will involve confort food!! (maybe a CatHead Biscuit/Conecuh sausage/Scuppernong preserves/heavy cane syrup/fresh coffee)
By the way, are the tomatoes bloomin'? Pick some by mid-June??

Tomatoes?? You must have me confused with someone else. Breakfast sounds great.... but when did scuppernine become scuppernong?

My son and his family are coming June 20. Daughter-in-law asked if tomatoes would be ready. I told her we could at least have some fried green tomatoes.

Google it. When I was pickin and eatin em off the vine , they were scuppnines. Then, I got educated and it became Scuppernongs.
By the way, if you know about scuppernines, can you eat one from the shell without getting any seeds in your mouth?? My mother (86) just this weekend showed me how to do it.

Yes, they were always scuppernines and muscadines to us growing up, I don't care what Googlenong says. Not sure I can handle the feat your mother taught you.
