Passing thru Sam's today, and a guy at one of the food sample stations was preparing Chicken Salad with canned chicken. One of the ingredients among others was bottled Ranch Dressing.
Ranch Dressing?
My bride makes chix salad out of canned chix breast, leftover baked chix/Walmart fried chix/Sam's rotisserie chix/smoked chix/leftover chix etc. Usually involves chopped onions,celery,roasted pecans, garlic, sometimes apple, etc. But, always Hellman's Mayo, the heavy kind, you know? Lots of lemon.
There have got to be thousands of favorite recipes for Chicken Salad. And, man it is good as a cold plate during Summer.
Share one of your's if you dare, and we can critique it in public.

I'm a traditionalist for chicken salad

Chopped white meat chicken
finely chopped onion
finely chopped celery
a little salt and pepper, a bit of poultry seasoning.

Mix it up with a bit of mayo -- just enough to bind it.

I know a lot of people do fancy stuff with grapes and pecans, or curry powder, but I really like it best when it is simple.

2 chicken breast halves
1 cup Fuji apple chopped
1 cup chopped walnuts
1/2 cup mayonnaise
1/2 cup sour cream
2 tsp tarragon leaves
1 cup red grapes, cut in 1/2
salt and freshly ground black pepper


Salt & pepper the chicken breasts in the oven at 350 skin side up. Roast for 35 to 40 minutes, until the chicken is cooked . Let cool. (you can use rotisserie chicken too but I like the breasts)

Bone the chicken and cut the chicken into a 3/4-inch pieces (not tiny sissy pieces).

Then toast the walnuts in the still hot oven until toasty(don't burn).

Mix together the mayonnaise, sour cream, salt and pepper. Fold in the chopped tarragon leaves.

Place the diced chicken in a bowl, add the walnuts and grapes. Add the dressing and toss.

Sometimes I will add chopped celery, omit the tarragon and add curry to taste.

I use the Sam's canned chicken all the time

Sam's Canned chicken (drain well)
Sam's Vidalia Onion Creamy Dressing (add enough so the chicken is not dry)
Wickles relish (two table spoons)
just a touch of mustard

It will be a desperate and sorrowful day at the McGill home if ever forced to make a meal of anything with canned meat....
