I picked up a bottle of pork brine the other day at Catherine's. I had a nice pork loin so I brined it for 48 hours. Then I took it out, dried it off, patted it with my dry rub and we cooked it using the indirect method. It was DELICIOUS! The flavor of the brine permeated the meat and kept it moist and the dry rub created a nice crust. Has anyone else here brined pork? I've brined poultry before, but this was my first time brining pork.

Does the brine come as a liquid or a dry package you mix up? I think I might go to Catherine's and get some for a loin I have in the freezer.

You can also google it and make your own. I don't know the content of the brine at Catherine's, but many are very high is salt as the name suggests. There are recipes avaible with low salt content that use cider, vinegar, mustard, olive oil and other varieties of ingredients. I use my own mixture of the above along with some spices....the recipe changes depending on what I'm going to make and how I plan to make it.

It's dry and you mix it up. It's on the meat counter at Catherines. I think it was $4.99.
