Subject:   Need Pickled Jalapeno Recipe

Now that my bumper crop is coming in of jalapeno, cayenne, habanero and Greek peppers I need to find a good pickling recipe. Have googled and printed out a couple, but wanted to see if anyone had a true winner. We like the taste of the Old El Paso Jalapenos. Have tired several others and still think the Old El Paso suits our likings the best.

Never tried it, but here is one from the Chevy's Fresh-Mex Cookbook: 2 cups of fresh whole Jalapeno chilies 1/2 cup white vinegar 1/2 cup water 1 tsp salt 1 clove of raw garlic, sliced Combine all ingredients in a saucepan over high heat. Bring to a boil, then remove from heat and let the jalapenos cool in the liquid. You can serve this immediately or in an airtight container in the refrigerator. I don't see why you couldn't pop this mixture into a canning jar and process for longer term keeping.

Your recipe is very similar to one I found online, but instead of cooking the Jalapenos you cook the vinegar / spice base and then pour such over the jarred jalapenos.

I'm going to  try this recipe.  Seems like every recipe I try the peppers get mushy.  Heard that a little citric acid was the answer but didnt work for me.  Thanks for posting the recipe
