Well, I did my 4th of July rib smoke out and……delicious! I used a Brinkman off-set firebox smoker, with Kingsford charcoal and a combination of hickory and mesquite wood chips. Cooked the beef and baby back ribs about 1.5 hours, then threw on some chicken legs and sausage links. Cooked for another couple of hours, then ready to eat. Ribs were cooked down by that time, so very tender. Couple of homegrown jalapeno and cayenne peppers on the side topped of a great meal.
