Any suggestions as have plenty of recipes, but looking for something simple yet different for game day. Tired of the same old stuff. So any favorites for something simple, but extraordinary?????

Tailgate Roast Beef rolls

Combine 8 oz of cream cheese, 1 pkg of ranch salad dressing mix and 1/2 cup of chopped green onions.  Slice one pkg (24) count small dinner rolls in half.  Remove top of the rolls in one piece and spread cream cheese mixture on both sides of rolls.  Layer 1 lb. of sliced deli roast beef and 12 slices of swiss cheese on the bottom layer. Cover with the top layer and brush with melted butter.  Arrange on baking sheet and bake at 350 for 10 to 15 minutes or until goldern brown.  Slice into 24 small rolls.

Can mix up the ingredients, for instance I spread the rolls with store bought cheese spreads and switch out the meat and the cheese.
I make these ahead, wrap in foil, bake and take to game.

Fatties
Not super simple butnot hard either. They can be made a few days ahead.

1 lb italian sausage
10 slices bacon
onion, b pepper, cheese of choice, anything else that strikes your fancy

take sausage out of case and place in gallon zip bag. Smush out till flat and less than 1/2 inch thick. cut sides of bag and lay top side back. Put peppers and stuff in middle. Not too much!!! Use the bag to roll the sausage around the filling into roll. Use bacon to go around outside. Look into bacon weave, I'm not smart enough to splain it here.

Smoke at 240 ish for 2 hrs ish. Slice and enjoy.

I made 3 this weekend. 1 with hamburger, shrooms and swiss. Made killer sliders.
