Roasted, smoked or fried????  Flavor/moisture/presentation?? Whole or breast?
I've had all the above, but, a breast fried and injected, with a zesty rub is my favorite. Tough to slice due to the "bark", but oh so good.

For presentation, whole, roasted with a Norman Rockwell plating.  For moisture and flavor, fried.  Doesn't matter breast only or whole.  My least favorite is smoked, too dry, but done right it's very tasty!

We did a beer can turkey breast in the smoker this past summer.  Brined it, used a rub and a barbeque sauce.  It was delicious.

I love smoked turkey done right, but so often it ends up dried out.

I've never fried one, because just the thought of it scares me.

I like a good roast turkey, as long as the cook doesn't let the breast dry out waiting for the dark meat to finish.
I've always brined my whole turkeys to make sure that didn't happen.

Read this several years back and it does work. Have been cooking turkey this way for the past 4 years. To keep the breast meat from drying out cook the turkey upside down so the dark meat continually drips down on the white meat.

I rotated the turkey on the roasting pan rack 45 degrees every 30-45 minutes. I remember it made for a really moist turket but I also remember it being a real pain to do. And I felt like a human rotisserie. Then there's the wine basted turkey by Kim the "Kimmer" Peterson the talk show host on WGST in Atlanta from 1992-2006 .... I think it was baste the turkey every 30 minutes with a good Chardonnay. I'm not sure how much actually got on the turkey though...

To keep a smoked turkey from getting dry I always inject it. I boil the giblets with some celery, garlic, onions and butter. Take out the giblets and then blend everything else up. Inject the turley with the turkey with this marinade and stick in the fridge for 24 hours. I don't use the store but injector stuff. Too fake tasting. This marinade maintains the turkey flavor while adding plenty of moisture. I do the same with my fried turkeys as well.
