turkey is probably the least favorite item for me

stuffing (glad you didn't call it dressing)
sweet potato casserole
mashed with good gravy

all else is gravy, pun intended

My favorite "must have" is a home made noodle recipe (almost like dumplings) cooked with  turkey broth and meat.

My wife and I prefer a spicy bread based stuffing based on my moms recipe (more of a northern thing)  My mother-in-law  makes a true southern corn based dressing, and she is a true southern raised cook....makes her mad that we like the Yankee stuffing better (LOL).

Since we don't "stuff" a turkey, my Mom serves "dressing". It's that largest dish on  the sideboard, with the golden crunchy crust and soft center. Made with cornbread, a little stale bread, loads of chopped onion, black pepper and chicken stock. And, by the way, there is always a second dish in the oven.
If Mom went with a different dressing, I think there would be War.

You are correct, the "stuffing" my wife makes is from homemade bread and never sees the inside of the bird.

Absolute best part of Thanksgiving meal is either that night or in the days following:

2 slices of homemade bread
turkey meat
"stuffing"
sweat potato casserole
little bit of mashed
some gravy
cranberry sauce

all made into a sandwich, mmmmm

I understand I am an outsider on "the forum" but wanted to say I have 5 giant Sunbeam loaves of bread drying....for bread dressing. Hopefully, it will be enough for the multitude of folks descending on the farm for Thanksgiving. We have squash/broccoli and green bean casserole. This year we are adding asparagus/vidalia onion casserole. Then we will watch football game Friday. We have graduates from both sides, so there will be alot of "yelling". In the end, it is all about family and having a good time. And,,,BTW, the moon is beautiful over the lake.
