1 1/2 Lbs. ground Chuck/sirloin, etc.
1 large onion chopped
1 pkg. dry taco seasoning
2 cans enchilada sauce (hot or not)
6/8 flour tortillas
1 large can refried beans
1 1/2 cups water
16 oz. favorite Mex grated cheese (at least)
8 oz. salsa (hot or not)
Chopped Mex peppers to taste

Pan fry ground meat with a sprinkle of garlic powder/onion powder/cayenne pepper/Mex peppers.. Add chopped onion at the end of frying. Drain away grease. Add taco seasoning dissolved in water. Cover and saute for 10 minutes. Mix in refried beans. Keep warm.
Oil 9x13 baking dish. Pour 1/2 can enchilada sauce over bottom. Preheat oven to 350*.
Fill and roll tortillas with meat mixture. Place in baking dish, fold down. Spread salsa over tortillas. Pour enchilada sauce over tortillas.
Cover with cheese. Bake uncovered for about 45 minutes. Serve on a hot plate with a good salad, tortilla chips and your favorite Tequila beverage or beer. (and ice water)

Here's how I make mine. Sorry, I'm not great on exact measurements because I rarely use them.

Fire roast some (10+) Roma tomato's  (or buy them canned if out of season). Put them in the food processor and puree.  Saute a finely chopped vidalia  onion in butter with 2-3 cloves of crushed garlic. Add the tomato puree and 2-3 tablespoons of chili powder to the onions and garlic. Simmer.

Make some pulled pork or pulled chicken (2 or 3 cups of leftovers from a beer can chicken or a boston butt work great).  Mix meat with some of the sauce (just enough to slightly wet the meat) and also mix in  some cheese. I like sharp cheddar, but use what you like and an amount you like.

Heat a skillet with high temp vegie oil in the bottom. Dip corn tortillas in the sauce and then fry in the hot oil for a few seconds on each side. Remove and roll meat and cheese mix in tortilla. Place in oiled glass baking dish. Poor remaining sauce over the top and  sprinkle on  more cheese.. Bake at 350 until cheese is bubbly and remove. Sprinkle with fresh cilantro and fresh (diced) jalapenos and dig in. Sour cream, avadaco, fresh pico de gallo, and finely chopped lettuce go well with the finished product.

BTW, I vary the above depending on what I'm in the mood for and who will be eating it. Sometimes I mix fire roasted peppers in with the sauce and add other spices to taste. For a slightly less acidic flavor, add just a bit of sugar. The amount of sauce is also a variable and sometimes I make them much "wetter". You can double dip in sauce before and after frying the tortillas and add more or less to the meat and on top.

Mack and I certainly share a passion for comfort cooking, and I hope to meet him this spring or summer but I figure it to be more of an "eat up" than a "throw down". I went by his place a few times last summer, but we never hooked up....that's going to change this year.

Your problem was, when you came by you were riding with LNG. Hard to navigate with his 30' extension ladder lashed across the helm, and large bags of donkey dung stacked in all the seats.

My Spanish Esposa is heading to Miami this week for a while, returning with her treasured Cubano treasures in her luggage, hopefully not confiscated by TSA in FTL.
Tonite she is feeding me a hearty Meatloaf, baked sour cream/garlic/chive potatoes, green beans. And, you said something about comfort food?? Lipitor Nite.
