Anybody have a good BBQ sauce recipe they will share? I've been working on one on and off for years and I just can't get it right.

TC, we rarely use a sauce during the cooking, rather it is served as a side during the meal for those who want it. Rather than brewing my own recipe, I sometimes buy off-the-shelf common sauces (mustard/ketchup base) and add Texas Pete or brown sugar or cayenne, etc. to get the flavor I like. Chances are 50% at the table will like it and the other 50% have a better recipe. Crap shoot, just like the "best" Sangria recipe??

I got this one off this site two years ago INGREDIENTS: 2 tablespoons butter ½ medium onion, chopped 2 cloves garlic, minced 3 chipotle chili peppers (canned), diced ¼ cup cider vinegar ¼ cup brown sugar 2 tablespoons molasses 1 cup ketchup 1 teaspoon salt 1 teaspoon black pepper ¾ cup Dr. Pepper STEPS: Melt butter in saucepan over medium heat. When foam subsides, add the onion. Sauté for 2-3 minutes until opaque. Turn heat to medium-low, add the garlic and continue to sauté another minute or two. Add the chipotle and cook for a couple of minutes. When the above is wilted and heated through, add the vinegar, brown sugar, molasses and ketchup. Mix well. Add the salt, pepper and Dr. Pepper. Stir well and bring to a simmer. On low heat (barely a simmer), continue to cook the sauce for 20-25 minutes, allowing it to thicken. When done, strain it — and enjoy!

Here is one that we enjoy. Like Mack we have it for people to add to the finished product.

Tangy Orange BBQ Sauce

6 oz can frozen OJ concentrate, thawed

¾ cup chili sauce

½ cup dark brown sugar

3 tbs Soy Sauce

1 tbs brown mustard

1 clove garlic, mashed

2 tbs fresh lemon juice

½ cup chicken stock

1 tsp Tabasco sauce

1 tsp salt

2 tsp Worcestershire sauce

 

Combine all ingredients in bowl and mix well. Place in medium sauce pan, cover & simmer gently for 20 minutes. Stir occasionally. Be careful not to scorch. Cool, cover & refrigerate.

For you steak lovers like me, how do you season a steak headed for the grill? And, do you add a sauce on top when serving? What kind?
We brush on a thin coat of olive oil, sprinkle with sea salt and cook, adding cracked pepper late. No sauce.

Mack, I don't use it while cooking, except as a finish to ribs. I am looking for something for the table for those whose palate is not discriminating enough to appreciate the subtleties of good barbeque.

Take any good hickory bbq sauce from the store (that is way too sweet) and add about one third proportion of apple cider vinegar.  Quick, easy and tangy.
