Roll boneless skinless chicken breasts in beaten eggs then crushed ritz crackers. Fry in oil until chicken is golden brown and cooked through. Next make a cut into the fried chicken breast and fill with your homemade pimento cheese. Bake in 350 oven until cheese oozes. Enjoy!

would like that on his/her plate. Of course the side dishes of Garlic/Cheese Grits and an Artichoke heart/mushroom/scallion salad might be a problem. Grits??
Next time you make this, how about posting a picture?? It sounds very good and I'll bet it looks good too.
