I do plan on putting an umbrella over the dock - it is open to the sun.  How much hotter is composite vs wood?

If its going to be covered then it will only be hot when the sun is shining on it.  I have composite at home on my deck and wood at the lake.  The wood is not as hot but both get pretty hot with direct sunlight in the summer.
