I start heating two quarts of my homemade chicken soup In the meantime I thinly slice 3 lb of potatoes and add to soup. When the potatoes are almost done I add canned diced tomatoes and bag of fresh spinach with stems removed. Once the spinach wilts add Parmesan cheese and a pinch of nutmeg. Adjust seasoning to your liking. Enjoy!

My favorite soup is Albondigas, it's a Mexican meatball stew, served with a variety of vegetables! I usually use corn, chayote (Mexican squash), zucchini, and potatoes and you just cook the meatballs in this delicious broth for a couple hours and voila! So perfect for a cold day
