Ok folks, for this one you need a grilling basket and there isn't much to it. I start with a flank steak or flat iron steak (or 2 or 3) and slice it up. Thickness depends on preference, but I slice mine fairly thin (1/4 to 1/8 inch). Put the meat in a bowl and add your favorite fajita marinade. I make a marinade with olive oil, James Brown hot sauce, garlic, lemon, onion juice, red pepper, black pepper, and salt. Let the marinade soak in for at least a half hour.

Slice a Vidalia onion and a green pepper, again thickness is a personal preference.

Get the fire going. This cooking method works very well on the Weber kettle or a green egg. I use a medium hot temp of around 350 degrees. Throw in some mesquite (or hickory/ just prior cooking.

If you like the meat on the rare side, coat the veggies in olive oil and put them in the basket on the grill. Add the meat about 3 minutes later. If you like the meat medium to well, add veggies and meat at the same time. You will need to open the grill and stir 3 to 4 times while cooking. Time is obviously contingent on how much meat you cut and how you like it done, but it can vary from 8 minutes to 20 minutes.

The same thing can be done with chicken, shrimp, and just about any combination of veggies (or veggies only). If you don't have a grilling basket, you are missing out. As far as baskets go, there are several types available. I recommend a square basket with slanted sides. I also recommend one made from solid metal with holes (rather than a wire mesh). I've tried several types, and these work the best (I added a link so you can get the idea). The link shows the style I recommend, but I know nothing about this particular brand. I have one that is stainless and one that is coated with a porcelain-like substance and both work well.
