I've got the ole smoker going with a nice butt on the grill. I'll smoke it for about two and a half hours and then wrap it in foil and let it sit on the grill at about 225 degrees for another three to four hours. Take it off and let it rest for about 15 minutes and then have at it!!!!

I use a rub I get from Jeff Grimes down in Andalusia(sp) that's call "Dixie Dirt-Good Old Butt Rubbins...It's all in how you rub your butt!!!" To order, you can reach Jeff at 334-222-7789. I've been using this rub for about 5 years and am well pleased with it.
