own a Chaparral 223 Sunesta. engine is merc alpha one 5.0. Thinking I coulds use a little more power out of the hole. Really just looking to get kids up on skis/wakeboard. Any suggestions on pitch, stainless or aluminum.

Have you tried a "whale fin" or I think they are called hydro fins. It's the fin that goes on your outdrive. I have a 20' ski boat with a 5.0 and had the same problems. years ago I bolted on a whale fin and it is awesome.
