Subject:   I Need a BBQ Sauce Recipe..

for basting pork baby backs while smoking.
I use a dry rub to start them, and smoke them for @ 2 1/2 hours at 225*, but I want to baste them with something midway and late to keep them moist.

It's not going to be a finishing sauce. You need a basting sauce. I would do 3/4 cup cider vinegar to 1/4 cup of oil. Add red pepper flakes oh say 1 TBS and if you want, a little of the rub you used.

Now you can put 3/4 vinegar and 1/4 water with a little lemon in a spray bottle if you don't want to baste. that will keep it from drying out.

When you get bored one weekend, this is how i do my ribs.

-Pull of membrane
-Place dry rub on ribs
-Cook on 225 for a total of 5 hours
-Cook for 3 hours - No turning
-Remove ribs - Place in aluminum foil with coke (yes coke - it broils the ribs and yet places the sugar on the outside for your sweet taste)
-Cook like this for another hour. it really is only about 35-40 more minutes.
-Remove foil and place ribs back on for the last hour. Start brushing your sauce on every 15 min or so.
-You can't even get them off the egg they are falling apart.

Wow, that sounds nice. I use vertical rib racks, but I guess I could go from the racks after the first 3 hours to foil with Pepsi and back to racks for the final hour??
