Subject:   Labor Day Weekend/Grillin'

Boy did we ever have a great time at the lake this past weekend. We had 5 couples, a couple of 2 year old girls and a couple of dogs. One of the guest did a great Low Country shrimp/crawfish/crablegs boil on Saturday afternoon that was out of this world. I got up early Sunday morning and started up the ole smoker and put on two big Boston Butts and a couple racks of ribs at about 7am. We ate about 1:30pm. The butts were right on target and the ribs were fall off the bone super. I did something a little different this time with the hickory chuncks. I normally soak them for a couple of hours before putting the chuncks on the hot coals. However, this time I soaked the chuncks overnight and I seemed to get better and more smoke from the chuncks. Thus the meat had a better smoke ring and more of the good ole hickory flavor.

Grilled teriyaki chicken, sweet potato, red onion, red bell pepper, squash and pineapple for Sun supper. Whole chicken cut in half, marinaded chicken overnight. Bone side down for most of the time, turned over to crisp the skin at the end. Used a honey teriyaki with light black pepper on the pineapple. Used bamboo skewers on the veggies. One of these days gonna try some rosemary skewers.
