Did this at the lake last weekend and it was a BIG hit with all my family and relatives. So decided to post and see what other great recipes may be lurking out there for this summer for all to enjoy.

Seafood Boil Recipe

Add per 8 quarts of water: (Seasonings)
· 1 1/3 oz of liquid shellfish boil
· 1 Beer
· 1 lemon, quartered
· Salt to taste
· Cayenne pepper to taste (a dash or two)

Ingredients per Person:
· 3 new potatoes (medium size)
· 1 small peeled sweet onion
· 1 ear of corn (cut into thirds or half depending on size)
· 1/4 pound Kielbasa or coneca sausage (cut into 3” pieces)
· 1/3 pound medium large shrimp (22-24 count per pound)
· 1/2 pound of Alaskan King crab legs
· 1 lobster tail per person
· Quart of drained and washed oysters

Cooking Directions:
· Fill large pot with enough water to cover all ingredients
· Add Seasonings above per 8 quarts of water
· Bring water to a boil for 5 minutes
· Turn heat down to Medium
· Add Potatoes – Cook until Potatoes are ½ done – About 12 to 15 minutes
· Add Sausage 5 minutes after Potatoes
· Add Onion, Corn and Crab – When Potatoes are ½ done. Cook until all vegetables are tender – About 10 minutes (If using frozen corn or precooked Alaskan King Crab legs add with Shrimp and Oysters)
· Turn off Heat – Add Shrimp and Oystesr. Cover pot and let sit for 5 to 10 minutes, till Shrimp is done
· Drain and serve immediately.

We served on several layers of brown craft paper and just poured the seafood boil in the middle of the table. Makes clean up simple, just roll up craft paper and throw in garbage bag.

Hushpuppy Recipe

· 1 cup flour
· 2 cups corn meal
· One egg
· Finely chopped onion to taste
· Add buttermilk till ingredients are consistency of thick paste.
