I think you'll find that it is discouraged by the Marine Police, and very well may be against the law.  The problem is that the PWC operator can come too close to the rear of the boat, and loses steering control when the PWC hits the wake wave, not to mention the added mechanical stress put on the PWC engine and drive shaft bearings when airborne and after landing.  We once had super fun jumping waves in the Gulf on our PWC until we realized we had broken three motor mounts and ruined the drive shaft bearings.
