I wouldn't use a bobber. I've always had success hooking through the mouth but have also had luck hooking through the back and tail. Strip really don't care. We typically rig a weight about 1' above the bait to keep it from swimming around excessively and tangling our other lines.

I assume you'll have out some type of light as an attractant. In the past i've had good luck jigging or pulling a bright/shiny silver spoon through the light.
