clean animals. They have a parting of the hoof and chew the cud - just like cattle. Nothing wrong or weird about that unless yo Momma didn't make it for you. Jamaican curried goat is actually very good.
People in the south-including me-were generally not raised eating lamb and turn their nose up at it. But lamb is a whole lot better for you and easier on your digestive tract than pig which is a scavenger. Rack of lamb is as good as any steak. I challenge you EggHeads to do a whole lamb shoulder and see what you think...
After you do that the next challenge is Cabrito. And I'll let you look that one up
