Instant replay isn't used for judgement calls such as Pass Interference. It is restricted to ball placement (was he in bounds or not, did the ball cross the plane of the end zone or not, did he get the first down or not, did the onsides kick travel at least 10 yards) and possession (did he make the catch/interception or not, did he fumble or not, did his knee touch the ground.) They can also use it to make sure the clock is set to the correct time, and so on.
Judgement calls and procedural calls are not reviewable, though.
(You're right, though, that Georgia fans weren't whining when their wideouts committed two offensive interference penalties on the game-winning drive in 2002, and LSU fans had more liberal views of pass interference when they knocked an Alabama receiver down in the end zone in 2004. Back then, that was known as "letting the boys play" and "don't let the refs decide the outcome of the game." Like Jim says, tit for tat.)
