You have to remember that the "old Kowaliga Fish House" (actually "Cecil's on the Lake") was NOT run by Russell Lands after the summer of 1986; from then until it burned it was completely in the hands of Greg Cecil, an experienced restauranteur.

In the hands of Russell, it had trouble making money, so they let Cecil take over. He managed to turn things around almost immediately, but that's because he knew what he was doing.

Put that restaurant in that site in the hands of someone who knows what they are doing, and it will work. But open the doors and think it will work because it used to, and you'll wind up with what you have now.
