I grilled some pork chops last weekend and over cooked them.  There was quite a bit of lump charboal left over and I have thought about taking them out of the grill to store them in an airtight container, but then thought that might be getting too obsessive. I have just read a lot about the necessity of keeping the lump charcoal dry.  I think my next attempt will be to smoke a couple of chickens, I have some "chicken sitters" that I have used on my old smoker, they work pretty well to hold the chickens up.
