You are a devout smoker, but do you use a grill? If so, consider. Grilled Pork Loin Roast (yeah, RoswellRick is rolling his eyes at the Pork again)
Sweet Potato Casserole Veggies (corn on the cob? butter beans, fried green tomatoes if they were in season) Whole Pork Loin- about 6 or 7 pounds (Sam's has some good ones) Inject with a mix of Butter/garlic/balsamic vinegar. Bag and marinate overnite. Pat dry. Coat lightly with olive oil. Rub liberally with your favorite rub (Toni's for me) Set aside for 1 hour at room temp. Light grill for a 2 zone cook. Grill the loin hot, hot on all sides until chocolate brown. Move it to the cool zone with a temp probe. Cook covered until @ 165/175*.
Sweet Potato Casserole- Fits in a 9x13 oven dish. 6 large sweet potatoes. Nuke em' till tender. Cool. Peel. Cull the hard ends. Mash in a large bowl. Add 1 cup sugar, 1 cup milk, 1 stick melted butter, 2 beaten eggs, 1 tsp. vanilla and blend with mixer. Pour into buttered casserole dish. Topping- 1 cup chopped pecans. 1 cup brown sugar. 1/2 cup flour. 1/2 cup melted butter. Blend. Spread over casserole evenly. Bake at 350* for @ 30 minutes until crunchy top and bubbling.
