Even with the Mavericks I still feel compelled to check manually. There is no substitution for knowing how something should look and feel when its ready. What I like is the ability to get busy on another task and still not let something overcook. I would hate to ruin a complete smoker full because I decided to take a quick 3 hour power nap. :-)
