you have it right. Of course its hard to complain about it since this is a small town with a low Mexican population. The food is surely a bit bland. It's missing layers of flavor. I don't think they use enough garlic, onions adobo etc in their cooking. But then again folks in areas that are not used to the real thing might think its too hot or not like the taste.
