When you want meat and taters, it is good. Here goes. Wife's recipe.
- 1.5 lb. Ground chuck/sirloin/round
- 1/2 Onion chopped
- 1/2 bell pepper chopped
- 1 garlic clove chopped
- 2 t seasoned pepper
- 2 t salt
- 1/2 cup Italian Bread Crumbs
- 1 cup shredded cheese (your favorite (pepper jack?)
Sauce- 1 cup ketchup 1 cup brown sugar Blend lumps.

Lightly sautee onion/pepper/garlic in 1 T olive oil.
Blend all ingredients with hands in a bowl.
Press blend into a 5x8 loaf pan.
Cover with some of the sauce and then the cheese.
Bake uncovered at 350* for about 45/50 minutes.

Easy Microwave Taters- Again, my wife's(sister) recipe.

- 6/8/10 medium red potatoes (washed/pitted/skin on)slice to about 1/4 inch
- 1 medium onion sliced to rings
- 2T olive oil
- 1/2 stick (yep) real butter
- 1 cup favorite shredded cheese
- Salt/pepper/seasoning to your taste

Layer potatoes in a shallow microwave dish. Sprinkle with olive oil and dot with butter. Season.
Cover with plastic wrap with a vent at corner. Cook micro for about 6 minutes on High. Check potatoes for tenderness.
Just before potatoes are fully cooked, add cheese, and continue to cook for another 1 minute to melt cheese.

Add a green veggie. Good feed. Extra sauce on meat when served.
