Throw away the temp guage that comes with any grill. Get a dual probe guage (@$45) that tracks meat temp as well as cooking temp at the rack level. The guage in my gas smoker was off about 80*. Junk. My gas model came from Cabellas via MasterBuilt at $179. Moved the water pan up about 4 inches to ease adding wood chunks, not chips. 10 minutes and 3 pop rivets. Planning to add a 10-inch sheet metal skirt around the base to shield the burner from wind gusts. More rivets, but not difficult. Maybe sell the design back to MB. Or, junk it and buy Cotton's electric model???
