1 1/2 Lbs. ground Chuck/sirloin, etc.
1 large onion chopped
1 pkg. dry taco seasoning
2 cans enchilada sauce (hot or not)
6/8 flour tortillas
1 large can refried beans
1 1/2 cups water
16 oz. favorite Mex grated cheese (at least)
8 oz. salsa (hot or not)
Chopped Mex peppers to taste

Pan fry ground meat with a sprinkle of garlic powder/onion powder/cayenne pepper/Mex peppers.. Add chopped onion at the end of frying. Drain away grease. Add taco seasoning dissolved in water. Cover and saute for 10 minutes. Mix in refried beans. Keep warm.
Oil 9x13 baking dish. Pour 1/2 can enchilada sauce over bottom. Preheat oven to 350*.
Fill and roll tortillas with meat mixture. Place in baking dish, fold down. Spread salsa over tortillas. Pour enchilada sauce over tortillas.
Cover with cheese. Bake uncovered for about 45 minutes. Serve on a hot plate with a good salad, tortilla chips and your favorite Tequila beverage or beer. (and ice water)
