Trusted advice from Cotton and UEM. Scary, but I did.
Very good. 3-slab pack was meaty, thick with lots of loin on top and firm between ribs. Little fat. $3.47 a pound, which matches WD's Buy-one-get-one price for the same ribs (Smithfield). Thanks for the advice, guys.
My visitor, a Kentucky/Tennessee Coal Miner/Mountain Boy finished them off the next morning with leftover Garlic Grits and a very cold BudLight. Then we went out looking for the catfish for dinner that night.
