The barbecue was great. I got to judge pork loin and ribs. The loin is really a difficult cut of meat to smoke. It has so little fat and it can dry out so fast if you're not careful. The 6 entries our table had to judge were really spot on. It was tough to pick a winner. And the ribs were out of this world. Every rib entry hit a home run and the 6 judges at our table split down the middle on 2 of the entries. Next contest will be in Statesboro, GA on March 9th and they will be playing the Statesboro Blues while we are eatin' some Statesboro "Q".
