I'm thinking about making a batch of bacon. I remember curing hams and shoulders and bacon as a boy when we killed hogs on teh farm, but that was a LONG time ago. Any suggestions on methods or recipes? I plan to cold smoke it, probably with apple, as the final step before slicing.
