Lots of smoke expected this weekend, right?? Share your plans with us. What's burning on the fire?
Friday Night- Fried Catfish, Cole Slaw, Hushpuppies (with onions sticking out all around), Garlic/cheese grits, Banana Pudding.
Saturday Night- Smoked Beef Brisket, Garlic/Butter/Parsley red potatoes, Broccoli salad, Key Lime Pie.
Sunday Night- Smoked BabyBacks, Potato Casserole, green salad, more Nanner' Puddin'.
Monday?- fight for leftovers.

I'm leaving for the lake tomorrow and I'm taking a pork shoulder, 4 slabs of baby backs, 3 whole chickens, a bag of wings and will buy my veggies when I get there. I'll start smokin' of Friday morning. I'll be running a 5K race in Montgomery Saturday morning and then back to the lake and the smoker. I plan on having the ribs Saturday evening while we watch the fireworks display put on by PikeSki and his partners near the Lakeside Marina. I am so ready to be at the lake!!!!!!

From some of the stories I've heard about you JD, I'm afraid that if I let you watch my smoker while I'm running the race, I won't have anything left but a bunch of ashes in the smoker when I get back. My place is in the Sandy Creek area. If you're out riding around in that area and see a lot of smoke and no fire, that will be me. Please stop in and I'll share some of my mighty fine barbecue with you.

My bride just got back with the Brisket, and it is a beauty. 8 pounds, about 2" thick with a decent fat layer on top. Bright red color. Inject. Marinate overnight. 230* for @ 8 hours. Slice. UGH.
Taking Fajita makings for leftovers, but, leftovers is questionable.

2 large chickens, a 10 pound pork shoulder, and a pork tenderloin are going on the BGE in about an hour, but I'm going to Redhill Cottage for lunch (Debra is making my favorite desert today). Chickens tonight with long grain rice and broccoli salad. Pork and something tomorrow....

I heading to Montgomery to make a few sales calls and then back to the lake. I have a pork shoulder and a couple of slabs of baby back ribs that I'm going to put on the BBS (Big Black Smoker) for this evenings meal. They keep talking about a 50% chance of rain today but looking out at the lake shows nothing but a beautiful day.

Now that it's here, the Memorial day menu has been narrowed to a BGE pizza with hot sausage, bacon, pepperoni, onion, black olives, mushrooms, thin sliced tomato, and sweet basil.
