Cooked greens tonight and cooked with Conecuh sausage cut into bite size pieces, simmered for about 4 hours and lets just say it was a winner -- as wife like it as well.

Anything cooked with Conecuh has got to be good!! When I cook collards, I use a generous dose of bacon grease along with a dash of baking soda,,,, the grease for flavor,,, the soda for gas afterwards. Never cooked them that long though. Even at a simmer, my collards start toward the mush stage at about 30 minutes. What am I doing wrong?? I really like greens(with onions and pepper sauce on top) with a pork chop, sweet potato, corn bread, sweet tea. Followed by a fried cinnamon apple tart. Followed by good coffee. Followed by sex, a Lipitor pill, a final sip of wine, and,,,,

I love Conecha but it doesn't love me. I gave up the pork in collards years ago and substuted chicken stock, Chardonnay and olive oil. I put the collards in a pressure cooker with the wine and stock, run for 30 minutes, add the oil at the last plus seasonings of course. Not too bad. Kinda miss the ham hock or streak-o-lean though.
