The food was good, the service was good, the bill was a little high but not anything worth complaining about.

But the hush puppies were terrible. I'm guessing they come pre-made, based on the consistency of size and shape, but maybe whoever makes them has perfected the tehnique. If so, they now need to work on the recipe. Add onions! Add some cornmeal to the flour, and mix in some buttermilk and eggs! But mostly: chopped onions! The current flavorless dough blobs (no matter how perfectly spherical they are) don't do justice to the rest of the menu (not to mention the history of the original Kowaliga.)

The quality of hush puppies in the restaurants around Lake Martin has been shocking. I can make hush puppies, and most of

the people that I know in the small town I'm from would, I'm sure, would have no problem beating those of any of the

places around the lake. Heck, you don't even have to have flour in them. If you use flour, a 4 to 1 ratio (corn meal to flour) is

all you need. And definitely the onions. I like the peppers, also. Also, it says in the Bible that sugar should not be added to

hush puppies or corn bread. BTW, flour soaks up grease, while corn meal doesn't. And one other thing, you can add melted

butter to your mix as an extra treat. (plus as in cooking french fries, a cool mix ends up with a good crust on the things)

That might be the problem: anybody around here can make hush puppies, but the ones served around the lake aren't being made anywhere around here. Sounds like they are being prepared in some commercial kitchen somewhere in Yankeeland, which is probably staffed by natives who don't know what a hush puppy is, much less a GOOD hush puppy.

 It sounds like New Kowaliga needs to ditch the pre-mades, and hire someone who used to work at Old Kowaliga/Cecil's. If any of those people are still around/alive, that is. The current hush puppies do have a nice consistent round shape, but I'd rather mine taste good.

I make mine spicey. I use a little jalapeno pepper, black pepper and Texas Pete hot sause. Sometimes a small amount of beer in the batter. They'll make a puppy pull a freight train.

For great hush puppies try Truman's on highway 9. I have been eating them there for over 20 years and they are always the same "good".

I had the same problem last year at Harbor Docks.  Couldn't hardly pull them apart, much less eat them.  Complained and found out they bought a mix.  Harbor docks quit selling those that evening and changed to a different recipe.  Great last time I ate their this summer.
