I cant take credit for all of this recipe but the end result is my own and wated to share it with ya'll. I cooked them last night and had leftovers for lunch. Dizzy Pig has a smoked/fried recipe out their website for chicken wings. Batter up the wings just like you are about to stick them in the fryer. Place them on the egg and smoke them until they are crispy. My addition is to take texas pete and one of those ranch dressing powdered packets. Mix the ranch powder with texas pete and coat the wings. They come out better than if you were to fry them. I also suggest a few Miller Lite's. It tends to help the process go a along a lot smoother.
Thanks for the inspiration to try something different. I smoked 50 chicken thighs using your base recipe with one adjustment. After battering the thighs and letting them dry a little, I throughly doused them with the Texas Pete and then coated them with the dry ranch dressing mix. They turned out great with the bite coming late in the eating of the thigh. I smoked them at 225 - 250 for 4 hours and then let them rest.
