Best ribs ever.

If you want the best ribs ever try this. Cook them in a crock pot with whatever your favorite sauce/rub combo is. They will be so tender they fall off the bone and have more flavor than when cooked on a grill or smoker. But the biggiest bonus is not having to spend half the day over a hot grill.

Remove membrane from back side of ribs (very important), either baby backs or slab.Use a rub (Tony Chachere's?) or favorite sauce liberally. Build wood/charcoal fire for indirect heat or fire box. Place a pan of water adjacent to fire for steam vapor. Place ribs in vertical racks away from fire, but over water pan. Cover with a foil tent. Add a few chunks of Hickory to fire. Close lid and leave it alone. Cooking temp should stay around 230/280, add fuel as needed. Cook for about 3 hours and they are ready. Works every time if you can refrain from "Peeking".
