After eating at Cross Roads last evening, we rode around Dadeville and found a new (to us) pizza restaurant out on Hwy 280. I think the name of the place is Pizza Billo's. We did not go in but it looked as though they have seating for dining in. I think we might check it out for lunch today.

We had lunch today at PaPa Billo's Pizza on Hwy 280 in Dadeville and I'm happy to report that we now have a pizza joint in Dadeville. Their pizza is freshly made and taste great. They have a very good menue and are open 11am to 9pm with dine in or take out. They are talking about setting up a delivery system in the near future. I for one welcome these nice people and their restaurant and will support them.

they will put a big OPEN sign up after the big delay in opening you might have some comments. I give it 60-90 days. I hope I'm wrong.

They make their own dough? And where is it?
If they go in the delivery biz they are going to be disappointed. Population density is not dense enough.

Look for the tiny holes in the crust. If they are there it's not "home-spun".

Gees RR, we're not in New York (thank God) or Chicago. All I'm asking for is a good pizza joint in the dadeville area. Have you been there yet? I sure hope you're wrong on the 60 to 90 days. Jugding from the crowd they had there for lunch yesterday, I think they will be around for awhile. I know we will give them all the business we can on the weekends that we are here.

I agree with you. Any decent restaurant in a small town is to be treasured and supported. No I haven't been to Crossroads but I will. All the people that opened there were good folks but you have to have some good business practices to make it. A couple of good recipes won't cut it. I think the location is tough to start so the food needs to be really good to go. I'm not a restaurant guy but I would guess the best chance would be a real BBQ with some simple fried and an emphasis on take-out.

I think there are such things as just bad locations. So if I see restaurants opening and closing consistently in one location, I have to think that the location is just wrong for one reason or the other. A person can have great business skills and still not succeed.

As for pizza, I could only wish for NY pizza. But, I know that isn't going to happen here, so rather than be disappointed, I just eschew pizza places.

I'm trying to make it happen in my kitchen. I have the peel, the stone, a high-end bread machine to make the dough and some King Arthur pizza flour. Problem is still the operator :-(
Practice-practice-practice. BTW I went up to Papa Bellos and looked around. They are open but not really ready yet..no take-out menus etc but the place looked pretty dang good. It is a franchise so a degree of consistency and some compromises are in place. If they can produce > Hunt Bros, Dominoes and PapaJohns it will be a hit.

According to my research, it is critical to let the dough rest overnight in the refrigerator. This supposedly develops that yesty taste.
I can make a decent pizza by getting my grill temp up as high as it will go and then cooking the pizza on the stone -- but it's still not "it". Now I'm working on a sauce.

After looking at their menu, I have my doubts about the place in Dadeville (Hawaiian Pizza, Taco pizza???), but I'd be wiling to give it a try.
