Along that line, anyone ever smoked with red maple (local)? Cut a tree down a couple of months ago and wondered what it would be like for smoking. Get hickory and applewood at Lowe's.

Sure coulda fooled me. Now I have heard bad things about using red oak - relates to some kind of bacteria it has - that will make the meat bitter. Heck... we eat maple syrup all the time so how can you go wrong?

I have found a good variety of different woods at reasonable prices at Academy Sports in Auburn.

I'm a hickory man. I love the flava. I just keep my eyes open for good size hickory limbs or pieces of trunk (or apple for that matter) on the side of the road and snatch em up when I see them. Cut em down to size ont he chop saw and bust em up with a hammer and throw em in a box. Total Cost - Free.

Hickory and Apple are my fav's too, and I also like mesquite on occasion....got plenty of the first two in the yard and green cut is the the way to go if possible. My dad usually bring back a big mesquite log from Arizona each spring..
