I have been asked to cook for a wedding in December. There will be approximately 100 guests. They would like smoked chicken, green beans, mac 'n cheese, and roasted potatoes. I think the chicken, green beans and potatoes will be easily handled. What worries me is the mac 'n cheese. I have made it in family size batches, but the recipe I use is rather intensive and expensive. Since the family is working on a budget I want to keep the costs down, but still have a good product. What is your favorite recipe and how many does it feed? Any tips would be greatly appreciated!!

Ingredients
  • 3/4 of 16oz box macaroni, uncooked
  • 3 eggs
  • 2 cups milk
  • 3.5 cups of your favorite shredded cheese (I use extra sharp cheddar, medium cheddar, and colby jack) 
  • 1/4 of a block cream cheese (optional if you want a more creamy texture) 
  • salt & pepper
  • butter
Instructions
  • Preheat oven to 375
  • Butter a 13x9 glass casserole dish 
  • Cook macaroni according to directions on box
  • Drain/rinse pasta and put back in pot
  • Salt and pepper pasta to your liking
  • Add 2 tablespoons butter to pasta and stir until melted
  • In a large bowl, combine milk and eggs. Stir until mixture is smooth.
  • Add 1 cup of cheese to milk and egg mixture and stir.
  • Add milk, egg, cheese mixture to pasta
  • Stir until macaroni is evenly covered
  • Add cream cheese to pasta  and stir until melted in (optional)
  • Pour half of macaroni mixture into baking dish
  • Top with 1 cup of cheese
  • Pour the remaining macaroni mixture into baking dish
  • Top with remaining 1.5 cup of cheese
  • Bake for 25-30 minutes or until cheese is bubbly and browned
  • Let cool for about 10 minutes or until fully set
