Just to make sure the proper information is out there...
I sell aluminum docks, but the DECKING on the docks is purely up to the owner. When at the Atlanta boat show, I had several people say that they might deck one of my docks out in the IPE others have mentioned. I do offer natural cedar and vinyl, both of which avoid the metal-to-metal "sound" that I think you dislike. As for the appearance, I guess it's in the eye of the beholder, BUT I am installing docks near Chuck's Marina where I am putting cedar on the sides of the dock as well. This is due to the strict covenants in the subdivision (Stoney Ridge off Wildwood/34). It will acheive a very natural look.
However, you can't beat aluminum for low (like *no*) maintenance. My dock has the vinyl decking (an slotted and textured product that uses interlocking pieces) on it, and is in the Manoy Creek area, if you care to take a look.
If you are planning a "double decker" style boathouse, that's not what I do. My docks are stationary or floating, but not two-level!
