We eat a lot of striped bass at my place, and this is one of my favorite ways to cook them.

Wash a whole striper filet (one side of a 6-10 LB fish) and place it in a pyrex baking dish. Many folks cut out the "red", but I find it's not necessary for this dish - just eat around the dark part. Melt one stick of salted butter in the microwave, squeeze a lemon into the butter, stir, and pour over the filet. Sprinkle the filet with Tony Chacheres Cajun seasoning, and bake uncovered for 25 minutes at 400 degrees. Adding chopped onion and bell pepper makes the dish even better. If you want to get fancy add some peeled shrimp 10 minutes before the 25 minutes are up.
