The main problem with dockside service is kitchen capacity. When an RV pulls into Niffers with an order for 50 burger baskets on burger day, it may make some gross income but little on tips for the staff. On 2/$10 that is a $250 bill. But there is no $40 tip which the staff splits.

Meanwhile, the drink and tip paying sit down diners have to wait while all those burgers fry. The only reason drive up service makes money is when it is the off season when Lake Martin is dead.

When the LMOB gets its outdoor seating the kitchen will be at capasity.

If money could be made, there would be a restaurant that would do it.
