Had a similar situation about a month ago, but ours was hostess stated an hour wait (not a problem), as we arrived about 7:45 pm on a Saturday night.

As we sat outside on the deck waiting we noticed during this time there must have been 7+ tables inside and out that were clean and not being utilized (actually never used during our wait), guess they did not have enough wait staff to cover all the table. Found this sort of strange - why not use these tables (shorten the wait) and let the customers know they were shorthanded this evening and would get to them ASAP or at least take a quick appetizer and drink order as when we were finally seated and ordered our appetizers and meals were served together.

Do not get me wrong our food was good and our waitress was great just strange to not fully utilize all available tables.
